While I have done this dish before, I changed how I make this recipe and now it is even better! This is an easy dish to put together and very tasty too! Here is a preview!
Ready to head off into the kitchen?Ingredients
2#’s ground beef
1 small onion chopped
2 packages of taco seasoning mix
1 1/2 cups of water
2 2 1/4 oz cans chopped green chiles
1 bunch fresh cilantro chopped
1 14 oz can diced tomatoes
1 container of fresh salsa
Corn tortilla chips
1# medium cheddar cheese grated
Sour cream
Brown the ground beef with the onion.
When browned, drain the fat off the meat. Then add in the taco seasoning mix and water. Bring to a boil then reduce the heat to simmer until most of the liquid is gone. Then add in the green chiles, cilantro and diced tomatoes. Stir to combine.Next, preheat your oven to 350 degrees. Spray a 9 x 13 baking pan with non-stick cooking spray. Add in the meat mixture. Top with about one cup of the grated cheddar.
Then top with salsa, using just enough to cover. Follow this with the tortilla chips,then the remaining cheddar cheese. Cook in the middle rack of the oven for 30 minutes.When done, remove from the oven
and serve! We just topped this with some sour cream, but feel free to use this, along with some chopped olives, green onions, and a jalapeno chopped finely!Now, wasn’t that easy?

Have you ever tried this with carne asada?
I do use cilantro with carne asada too. I keep playing with that recipe. The other day I made it and saturated the meat with lime juice, cumin, garlic and pepper.
