The zucchini comes in quick in the garden and big! And the tomatoes all seem to ripen up at the same time! What is up with that? It means it is time for my recipe, “Tastes Like Pizza!”
Ingredients
Equal amount of zucchini and tomatoes
Garlic
Extra virgin olive oil
Fresh ground pepper
Basil
Oregano
1 cup Pesto Jack Cheese, grated
1/2 cup Basil Asiago, shredded
Take the zucchini and cut it into thick slices and the quarter. Take those lovely tomatoes from your garden,
and slice them.Dice the tomatoes. Add both to a mixing bowl. Chop up garlic finely. I used 5 cloves. Add to the bowl. Add a couple of twists of fresh ground pepper, and about a tablespoon fresh chopped basil and the same with oregano. If using dried herbs, use 1 teaspoon. Add in a good glug of olive oil and mix it up!Add to a baking dish that has a cover. Top with the cheese.Turn on the oven to 350 degrees and place the covered baking dish inside. From this point set the timer for one hour. I served this dish with a piece of fish laid over the zucchini and a bit of the veges on top of the fish! My tomatoes are all ripening at the same time. Just what IS up with that? I had a feeling August was going to be the month the tomatoes proliferated. It happened last year too. Well, I’m not going to complain about it. I’m going to eat them. I thought my mysterious tomatoes were Bush but they’re not. They’re too small for Bush. I thought their small size was from lack of rain. We’re getting enough rain now and they’re still small. I’ll never know now what they are but they’re good so who cares? LOL. Your dish looks and sounds delish! Great accompaniment to fish.
