I have never been much of a sweet eater. However, I found an article on the internet for a 10-minute soft serve dessert and after reading the article I had to try it. My husband chose the flavor and I made the dessert. This is so easy to make and will definitely impress company! You can make this just before serving, or if you make this ahead of time, take it out of the freezer to soften up before serving. This recipe makes 4 servings.
Ingredients
1/2 superfine sugar
1 bag of frozen unsweetened raspberries
1 tsp lemon juice
1 small container of plain yogurt
Let’s start with the sugar. You can either buy superfine sugar, or you can make it yourself. I made it myself, by taking a 1/2 cup of regular sugar and processing it in my food processor. I processed the sugar about a minute until it felt much less “grainy” than regular sugar. I noticed too that I had sugar “dust” floating out of the processor when it was ready.
To the sugar, add the frozen raspberries. Using the pulse button on your food processor, combine the raspberries and the sugar. Here is what it looks like right after I started.
Here is what it looked like when I was at the point that I could add the remaining ingredients.Let the raspberry mixture sit while you combine the lemon juice with the yogurt. Feed the yogurt slowly through the feeding tube in the processor. You will have to stop periodically to scrape down the sides of the processor bowl. Continue until all is added. and here is dessert!Now the secret here is that you are using frozen fruit. So, if you want to make this out of another flavor other than what you can buy in the store, then make sure that you freeze the fruit well ahead of time! I am thinking about pineapple, peach, strawberry, strawberry-banana….the list goes on!

Ross – thanks for the comment and again for signing up to follow my blog! I am all about simple and easy, in the kitchen that is! I am really thinking of doing this again with pineapple. Watermelon would be good too! I also have peaches ready to go for this, now all I need is more yogurt!
